3 1/4 cups (one 12 ounce box) crushed gluten free vanilla wafers or praline cookie crumbs (see recipe)
1 ½ cups chopped walnuts
3/4 cup powdered sugar (plus additional sugar for rolling)
3 tablespoons light corn syrup
1/4 cup unsweetened cocoa powder (plus additional for rolling)
1/2 cup dark rum

Directions:

1. In a large bowl, stir together crushed vanilla wafters, sugar, cocoa powder and
walnuts. Blend in corn syrup and rum.
2. Shape into I-inch balls and roll in powdered sugar (tip: I either wear food safe
gloves or cover my hands in powdered sugar while I roll the balls, so they don't stick.
