1¼ cups milk, scalded
1 cup shortening (can use butter or margarine)
1 cup sugar
1 teaspoon salt
2 cakes or 2 dry yeast
¼ cup lukewarm water
6-7 cups flour
4 eggs, beaten

Directions:
Directions:
Combine scalded milk, shortening, sugar, and salt. Cool to lukewarm. Soften yeast in lukewarm water. Stir and combine with cooled milk mixture. Add ½ of the flour and the beaten eggs. Beat well. Add enough of the remaining flour to make soft dough. Mix well.

Turn on a floured board and knead 10 minutes until smooth. Place in warm greased bowl, and brush with melted butter. Cover and let rise about 2 hours. Turn on board and form 3 balls for each roll (in order to make cloverleaf rolls). Place in greased muffin cups. Cover and let rise 1/2 to 1/4 hour, or until doubled in size. Brush with butter.

Bake at 375°F for 15-20 minutes. DO NOT OVERCOOK! Rolls should be a
golden color and only very slightly browned when done.
