½ cup butter
½ cup sugar
½ cup brown sugar
1 egg
1 tsp vanilla
1 ½ cups flour
⅓ unsweet cocoa
¼ tsp baking soda

Filling: 2 cups semi-sweet chocolate chips
⅔ cup heavy whipping cream
¼ cup butter
2 egg yolks, beaten
chocolate sprinkles

Beat butter and sugars until blended. Beat in egg and vanilla. In another bowl, whisk together flour, cocoa and baking soda. Gradually beat into creamed mixture.


Shape level tablespoons into 2 ½" wide patties. Press into bottoms and up sides of greased mini muffin cups. Bake at 400º until set...approx 8-10 minutes. Immediately press deep indentation in center of each one with wooden spoon handle. Cool in pan 5 minutes. Transfer to cooling rack.

For filling: In saucepan, combine chocolate chips, ream, and butter; c cook and stir over medium heat until smooth. Remove from heat.

In small bowl, whisk a small amount of hot mixture into egg yolks; return all to pan, whisking constantly. Cook over low heat, stirring constantly, until mixture is thickened and thermometer reads at least 160º, 15-17 minutes. Do not allow to boil. Transfer immediately to bowl. Cool 20 minutes, stirring occasionally.

Spoon 1 Tbsp filling into each crust. Top with sprinkles. Refrigerate until cold.
