2 TBSP butter
1 TBSP flour
2 C tomato juice (low-sodium)
1/2 C water
2 TBSP sugar
1/8 tsp salt (or omit)
3/4 C cooked wide noodles, optional

In medium saucepan, melt butter over medium heat. Sprinkle with flour and mix to make a smooth paste.

Gradually add tomato juice and water, whisking constantly, bring to a boil. Cook 2 minutes or until thickened. Add sugar and salt. Stir in cooked noodles and heat.

I'm going to try this recipe using low-sodium vegetable broth and add whatever veggies I have in the fridge. Maybe some potato chunks?
