Cookie Batter:
3/4 cup butter
3/4 cup granulated sugar
1 cup cooked shredded carrots
1 cup chopped nuts
2 tsp baking powder
1 beaten egg
1 tsp salt
1 tsp vanilla
2 cups flour

Orange Frosting:
Butter
Fresh orange juice
orange zest
vanilla
powdered sugar

Directions:
Directions:
1. Cream eggs, sugar, and butter.
2. Add cooked (drained), carrots and vanilla.
3. Add dry ingredients.
4. Drop on greased cookie sheet.
5. Bake at 400 for 8-10 minutes until when touched lightly with finger will not leave an
imprint.
6. Cool cookies and make frosting.

For Frosting:
Mix lump of soft butter with fresh orange juice, orange zest, vanilla. Then add powdered sugar until it reaches desired consistency. Frost cookies when cool.
