1 cup sugar
½ cup shortening
2 eggs
½ cup milk mixed with 2 Tbsp white vinegar
3 ripe bananas
2¼ cups flour
1 Tsp Baking soda
½ tsp salt
1 tsp vanilla

Directions:
Directions:
Cream sugar and shortening with an electric hand mixer. Add eggs, vanilla and sour milk and mix. Add bananas and beat until bananas are broken up. There may be a few small banana chunks remaining. Add flour,baking soda and salt. MIx well.

Pour mixture into a greased and floured loaf pan. Bake at 350º until golden brown on top and tooth pick comes out clean when inserted in the center.

For Muffins:
May add 1 cup of chocolate chips after the dry ingredents. Scoup batter into muffin tims lined with muffin liners and bake until golden on top and tooth pick comes clean when tested in the center of a muffin.
