1 Cup Diced Celery
2 Large Tart Apples
1 Cup Crumbled Blue Cheese
1 Cup Pecans or Walnuts (carmelizing in sugar is a bonus!)
Romaine Greens

1/3 Cup Cider Vinegar
1 Garlic Clove Peeled and Crushed
2 Shallots Peeled and Diced
1 Tsp. Ground Pepper
1 Tblsp. Dijon Mustard
1 Tblsp. Yellow Mustard
2/3 Cup Maple Syrup
1/2 - 1 Cup Oil

Mix dressing ingredients in food processor while gradually adding oil. Chill and serve.
