1 c. Sugar
1 c. Butter
1 Egg
1 Tbsp. Vanilla
2 1/4 c. Flour
1 tsp. Baking Soda

Directions:
Directions:
Mix sugar and butter.

Beat in the egg and vanilla until light and fluffy.

Mix in Flour and baking soda.

Divide the dough into halves. shape each half into a roll about 1 1/2 inches in diameter and wrap in wax paper and refrigerate until chilled.

Unwrap rolls and cut into 1/4" slices. Place on an ungreased pan and sprinkle with a pinch of sugar.

Bake at 375ºF for 10-12 minutes or until lightly browned around edges.
Store in air tight contained once cookies have cooled.
