TOPPING:
2 tablespoons butter in 8 X 8" pan
1/2 cup brown sugar
4 pineapple slices
4 maraschino cherries

CAKE:
1/3 cup shortening
1 1/4 cups sifted all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon lemon peel
1 egg



Pineapple Upside Down Cake
2 tablespoons butter
1/2 cup brown sugar
4 slices pineapple
4 maraschino cherries
1/2 cup pineapple syrup

Directions:
Directions:
Bake at 350 degrees for 30-35 minutes.

TOPPING: Melt 2 tablespoons butter in pan, add brown sugar. Stir. Lay pineapple slices and cherries on top of melted butter/brown sugar mixture.

CAKE: Stir shortening to soften. Sift in flour, sugar, bakung powder, and salt. Add pineapple syrup, lemon peel and egg. Mix until all flour is dampened. Beat vigorously for 2 minutes. Pour batter over pineapple. Bake until done. Let it stand 10 minutes; invert on plate. May serve with whipped cream.
