2 ¾ Cup Cake Flour
1 Box Jello Coconut Instant Pudding
1 Tsp Salt
2 Tsp Baking Powder
5 Eggs (6 if small)
1 ½ Cups Butter
2 ½ Cup Sugar
1 Cup Buttermilk

FROSTING

1 (16 Oz) Bag Of Coconut
1 (8 Oz) Box of Cream Cheese
2 Cups of Powdered Sugar
1 Stick of Butter

Directions:
Directions:
In a large bowl sift the together the flour, pudding, salt and baking powder.

Using a hand or stand mixer, mix the butter. Add the sugar and mix until creamy. Add the eggs, one at a time and mix until creamy.

Add the flour and buttermilk alternating, starting and ending with the flour mixture.

Use Bakers Joy (my personal favorite) and oil two 9 inch cake pans. Evenly distribute batter in pans.

Bake cake at 335 degrees for 35 – 45 minutes until a toothpick comes out clean when put into cake. Let cake cool in the pans on a rack for 10 minutes. Remove cake from pans to finish cooling.

Mix together the cream cheese, butter and powdered sugar. Icing the bottom cake layer , sprinkle some cocoanut and put the second layer on top. Proceed to icing the entire cake. Using plastic gloves, take cocoanut and lightly layer to the icing. Take a picture and Enjoy

The Basic receipt was my mothers, Susie Guinn . My mother passed in 2000 and I did not get the receipt from her.

This is mostly from memory and a little bit of tweaking. Everyone seems to love it and I hope that you do also.
