14 tbsp unsalted butter (1 stick and 6 tbsp)
1/2 cup white sugar
3/4 cup brown sugar
2 eggs
1 tsp vanilla
1 tbsp (or more if desired) ground cinnamon
1 tsp baking soda
1 3/4 cup AP flour
3 cups oatmeal
1 bag or desired amount butterscotch chips

1. Preheat oven to 350ºF
2. Mix butter on medium speed until fluffy
3. Add sugars and mix until well combined
4. Mix in eggs and vanilla
5. Add baking soda and cinnamon
6. Mix in flour in stages
7. Add in oatmeal and butterscotch chips
8. Scoop onto pan in a 3rd of a palm sized scoop, 15 cookies per sheet should be the result
9. Bake for 10 minutes, or until a brown rim forms on the bottom edge of the cookie
10. Place on cooling rack when done
