2 qts. milk
2/3 c. sugar
2/3 c. rice
2 eggs
2 cinnamon sticks
pinch salt

scald milk and sugar
add cinnamon stick and rice stirring constantly every 15 minutes until creamy (approx 1 hour) this creates the base of the pudding mixture

separate egg yolks and whites

beat yolks of egg in a bowl and add a small amount of the rice mixture to the beaten yolks

add yolks to the pudding mixture

beat the egg whites to soft peaks

pour pudding mixture over the egg yolks and fold in
