1˝ cups all-purpose flour
˝ cup unsweetened cocoa powder, sifted
1 tsp kosher salt
2 cups unsalted butter
žlb bittersweet chocolate, chopped
6 large eggs
3 cups sugar
2 tsp pure vanilla extract

Directions:
Directions:
In medium bowl, whisk together flour, cocoa powder & salt. Set aside.
In medium saucepan over med-low heat, melt butter to just simmering. Turn off heat; add chopped chocolate. Swirl the pan so chocolate is submerged in butter; let sit for 3 minutes. Gently whisk until smooth.
In a stand mixer fitted with whisk attachment, whip together eggs, sugar & vanilla on med-high speed until light and fluffy, about 5 minutes. Turn speed to low; slowly add melted chocolate mixture.
Add flour mixture to chocolate mixture; mix just until combined. Allow to cool to room temp; you can speed this up by putting in refrigerator. As it cools, mixture will become thick enough to scoop.
Stir cookie batter before scooping. Using a 1oz scoop, portion out cookie dough. Freeze cookies for at least 15 minutes. The cookies can be made several days in advance and stored tightly covered in freezer.
Preheat oven to 375°. Line baking sheets with parchment paper or silicone mat.
Position frozen cookies 2 inches apart on prepared baking sheets. Bake until set around the edges, about 12 minutes. The cookies will puff up and then will collapse slightly as they cool.
Allow cookies to cool slightly on baking sheet before removing to wire rack.
