1/2 can pumpkin (15oz)
3 c oats, old fashioned uncooked
1 ripe banana
1/2 c applesauce, unsweetened (Add 1/2 c more applesauce if using low carb protein)
1/2 c chopped dates
1/2 c chopped walnuts
12 packets stevia sweetener
1 tsp salt
1 tbsp cinnamon or pumpkin pie spice
4 eggs
3 scoops protein powder
1/4 c liquid caramel sugar free sweetener
3 tbsp peanut butter

Directions:
Directions:
1. Preheat oven to 350º. Prepare cookie sheet with nonstick spray.
2. Combine ingredients in a food processor.
3. Portion using a teaspoon.
4. Bake for 6 - 8 minutes, watch closely and do not over bake. It's ok if they are slightly soft in middle as they will continue to set while cooling

Subtract dates and walnuts for less calories.
Remove some of the oats if trying for lower carbs.
Add any type of protein powder or nuts or dried fruit to make your own varieties.
