Version 1: Large cookie
1 1/2 c. butter
2 c. sugar
2 eggs
1/2 c. molasses
4 1/2 c. flour
4 tsp. ginger
2 tsp. baking soda
1 1/2 tsp. cinnamon
1 tsp. cloves
1/4 tsp. salt
1/4 c. pecans (optional)
3/4 c. coarse sugar


Version 2:
3/4 c. shortening
1 1/4 c. sugar
1 egg
1/4 c. molasses
2 Tbsp. milk
1 tsp. vanilla
2 1/2 c. flour
1 1/2 tsp. soda
1 tsp. cinnamon
3/4 tsp. salt
3/4 tsp. ground nutmeg

Version 1:
Cream butter and sugar until light and fluffy. Beat in eggs and molasses. Combine dry ingredients and add to creamed mixture. Fold in chopped pecans. Shape into 2" balls and roll in coarse sugar. Place 2 1/2" apart on ungreased baking sheet. Bake at 400º for 16-18 minutes or until tops are cracked. Remove to wire racks to cool.


Version 2:
Cream shortening and 1 c. sugar. Beat in egg, molasses, milk and vanilla. Combine dry ingredients and add to creamed mixture. Cover and refrigerate 1 hour. Roll into balls and roll in remaining sugar. Place 2" apart on greased cookie sheets. Bake at 350º for 10-14 minutes or until tops crack and edges are slightly firm. Remove to wire racks.
