Ingredients:
Ingredients:
1 egg
3/4 tsp baking powder
3 cups gluten free all purposed flour with xanthan gum
1/4 tsp salt
1 cup sugar
1 tsp vanilla
1 cup Danish creamy european style butter
1 tbsp milk

Directions:
Directions:
1. Stir together the flour, baking powder, and salt in a bowl and set aside. In a separate bowl, place the butter and sugar and beat with a hand or stand mixer until the dough becomes light in color. Add the egg and milk and continue mixing.
2. Place the mixer on low speed and gradually add the flour mixture. Mix until the dough begins to pull away from the side of the bowl. Divide the dough in half and wrap each in wax paper. Refrigerate for 2 hours.
3. When ready to bake, preheat your oven to 375º. Sprinkle the surface where you will roll out your dough with some rolling pin with it. Remove one half of the dough from the fridge and roll it out until it's about 1/4 inch thick.
4. Use cookie cutters to cut the dough into desired shapes. Place each cookie an inch or more apart on a greased or parchment paper lined baking sheet. Repeat with the other half of the dough. Bake for 7 minutes or until the cookies are just beginning to turn brown on the edges.
5. After the cookies are baked, let them cool on the baking sheet for 1-2 minutes before moving to towel covered with wax paper to let cool. Let cookies cool prior to decorating. Have fun and Enjoy!

I found this recipe when my friend Toni Purkey asked me to bake gluten free cookies at Christmas time for her daughter's boyfriend. They were so good Toni asked me to make these every year since .I always decorated them real nice for her with royal icing.
