1 large egg
1/2 c. unsalted butter - softened
1/2 c. light brown sugar
1/4 c. sugar
1 Tbsp. vanilla
1 1/2 c. oats
3/4 c. flour
1/2-1 tsp. cinnamon
1/2 tsp. baking soda
Pinch of salt
1 heaping cup chocolate chips
1/2 c. nuts (optional)


Version 2:
1 c. butter
1 1/2 c. brown sugar
2 large eggs
1 tsp. vanilla
1 Tbsp. milk
1 3/4 c. flour
1 tsp. soda
1/2 tsp. baking powder
1 tsp. salt
1 1/2 c. oats
2 c. chocolate chips

Version 1:
Combine egg, butter, sugars and vanilla and beat on medium speed until creamed and well combined - about 4 minutes.

Scrape sides of bowl and add oats, flour, cinnamon, baking soda and salt and beat just until combined.

Scrape sides of bowl and add chips and nuts and beat just until combined.

Use 1/8 cup of dough and roll into balls - flatten slightly. Place a few chips on top of each mound.

Place mounds on large tray and refrigerate at least 2 hours or up to 5 days. Do not bake with unchilled dough because they will be flat and thin.

Oven to 350º. Line a baking sheet with parchment paper or spray. Put the mounds on cookie sheets at least 2 inches apart. Bake for about 11 minutes (for soft cookies) or longer if you want well done cookies - or until edges have set and tops are just set. Don't overbake. Cookies firm up as they cool.

Cool on baking sheet for about 10 minutes before moving to rack to cool.

Version 2:
Oven to 350º
Mix flour, soda, baking powder, salt and oats - set aside.

Beat butter and sugar with mixer until well blended. Beat in eggs one at a time then add vanilla and milk. Blend in flour mixture and chocolate chips.

Drop by tablespoons on ungreased baking sheet. Bake 10 minutes and rotate and bake for 2 more minutes until golden. Cool on pans 5 minutes before moving to wire racks.
