2 cups butter
2 cups sugar
2 Tbsp. vanilla
2 eggs
4 tsp. baking powder
6 c. flour

Frosting:
4 c. powdered sugar - sifted or mix on low for about 30 seconds
Add 2 sticks (1 cup) softened butter.
Add 2-3 tsp. vanilla
Mix butter and vanilla on low and then add powdered sugar.
Add 1-2 Tbsp. milk until desired consistency.
Add food coloring.

Oven to 350º

Let butter sit on counter for about an hour before you begin - cold to touch but can press stick with fingers.

Cream sugar and butter until completely mixed (3 minutes).

Add vanilla and eggs and mix until fluffy (about 3 minutes).

Mix in baking powder and then flour 2 cups at a time just until incorporated. Do not overmix dough. It should be firm but not dry.

If dough seems dry, add a little bit of vanilla or milk (start with a teaspoon).

With a hand full of dough, roll out cookies and cut into shapes. (The dough rolls better when not refrigerated.)

Bake 6-10 minutes. Thinner cookies 6-7 minutes. Thicker cookies could be cooked 9-10 minutes.

You do not want them to brown on the edges. Overbaking will make the cookies dry.


Frost.
