1/4 c. shortening
1 c. sugar
6 Tbsp. butter
3 oz. cream cheese
2 eggs
1/2 tsp. almond
3.4 oz box instant lemon pudding mix
1/2 tsp. salt
1 3/4 c. flour
1/2 tsp. baking powder
3/4 tsp. baking soda
1 c. white chocolate chips

Oven to 350º Line cookie sheets with parchment paper

Mix cream cheese, shortening, eggs and sugar in mixing bowl until well combined - for about 1 minute.

Add melted butter and lemon pudding mix and continue creaming for another minute. Add almond extract and mix.

Sift baking powder, baking soda, salt and flour. Once mixed add to wet ingredients and mix until combined. Stir in white chocolate chips.

Drop by spoonful onto prepared cookie sheets and bake 80-10 minutes until tops and edges start to turn brown. Let cool on sheets for 3-5 minutes and then move to cooling rack.
