1 stick butter
1 c. peanut butter
1 1/3 c. brown sugar
1 egg
3/4 tsp. vanilla
2/3 c. flour
1 tsp. soda

Directions:
Oven to 375º - Spray cookie sheet.

Mix butter, peanut butter and brown sugar until smooth. Add egg and vanilla and beat until smooth.

Blend flour and soda in small bowl and combine with wet mixture. Cover dough and refrigerate 20-30 minutes.

Roll dough into balls - sprinkle a little sugar on top and bake 8-10 minutes.

Remove from oven and let stand about 10 minutes then cool in frig for another 20-30 minutes.
