Ingredients: 3 large boneless, skinless Chicken Breasts, sliced into thin cutlets about 1/4” thick 1/2 t. Salt 1/4 t. ground Black Pepper 6 T. all-purpose Flour 1/4-1/3 C. Panko Crumbs 2 T. Olive Oil 2 T. Butter 3 cloves Garlic, minced 1 C. Chicken Stock 1 C. Heavy Cream 1/2 C. Parmesan Cheese, grated 1/4-1/2 t. Chili Flakes (depending on the level of heat you like) 1/4 t. ground Oregano 1/4 t. ground Thyme 1/3 C. Sun-dried Tomatoes, chopped 1 T. fresh Basil leaves,chopped (optional)

Directions:Season chicken with salt and pepper. Combine Flour and Panko crumbs in a pie pan. Dredge chicken in Flour and Panko crumbs, shake off any excess. In a large skillet, heat Olive oil and melt Butter on medium heat. Swirl pan to coat evenly with oil and butter. Brown the chicken in the skillet (do not overcrowd and work in batches, if needed) for 4-5 minutes on each side, or until golden brown and cooked through. Transfer onto a plate, cover and set aside. Sauté the garlic in the skillet for a minute, or until it’s fragrant. Add the Chicken Stock, and deglaze the pan. Scrape any bits stuck on the bottom of the pan with a wooden spoon. Adjust the heat to medium-low, add the Heavy Cream and the Parmesan Cheese, stir. Allow the sauce to simmer for a couple of minutes. Add Chili Flakes, Thyme and Oregano, stir. Season with Salt and Pepper, to your taste. Stir in the Sun-dried Tomatoes. Place the Chicken back into the skillet, in the sauce. Let the sauce simmer and thicken for a few minutes. If desired, garnish with fresh Basil leaves and serve warm with Rice or Pasta. |

Notes: This Chicken is creamy, juicy and full of flavor. It is said, this chicken is so good, if you make it for your partner, they will propose to you. Store leftovers in a sealed container in the refrigerator, up to 3 days. Reheat in the microwave or in the oven. Add a splash of water to thin out the sauce, because it thickens in the refrigerator.
