3/4 c butter
1/4 c coconut oil
2 c sugar
2 eggs
1 tbsp instant coffee granules
1 1/2 tsp vanilla
2 1/4 c flour
1/3 c dark cocoa or 1/2 c regular cocoa
3/4 tsp salt
1 tsp baking soda
3/4 c shredded coconut
1/2 c white chocolate chips
1/2 c semi-sweet chocolate chips

Directions:

Preheat oven to 350ºF. Line two cookie sheets with parchment paper.
Cream butter, coconut oil, and sugar.
Dissolve instant coffee in vanilla and add to the creamed mixture.
Beat in eggs, for at least a full minute.
Stir in flour, cocoa, salt, and baking soda.
While dry ingredients are being stirred in, add in the coconut and chocolate chips.
Scoop with 2 1/2-inch cookie scoop onto parchment lined baking sheets.
Bake just until outside of cookies are no longer shiny, 12-14 minutes.
Move cookies to a cooling rack after about 5 minutes resting on the cookie sheet.
