Ingredients: 6 tablespoons butter ½ cup brown sugar pineapple,rings Maraschino cherry halves, cut side down Jiffy basic yellow or butter cake recipe 1 egg ½ teaspoon vanilla Reserved pineapple juice

Directions:Preheat oven to 350°F. Melt 6 tablespoons margarine or butter and pour into an 8” square or 9” round pan, coating bottom and sides. Sprinkle ½ cup firmly packed brown sugar evenly over butter. Arrange pineapple rings over brown sugar. Place a cherry, with stem removed, in center of each pineapple slice. In separate bowl, beat Jiffy Golden Yellow Cake Mix with 1 egg, ½ teaspoon vanilla and reserved pineapple juice for 4 minutes on medium. Pour over pineapple in prepared pan. Bake 40-45 minutes or until toothpick inserted in center comes out clean. Cool in pan 1-2 minutes. Invert on serving plate. Cool or serve warm. |

Notes: Many of us remember Granny serving this favorite cake of hers. Though we don't have her recipe, we recall that she used crushed pineapple, maraschino cherries, brown sugar, and melted butter on the bottom and used a basic yellow or butter cake recipe on top. To be fancy, she used pineapple rings with the cherry in the middle of each.
