2 Cups of Sifted Flour

4 Egg Yolks

3 Sieved Hard Boiled Egg Yolks

6 Tablespoons Sugar

1 ½ Sticks of Butter

4 oz. Dark Sweet Chocolate

1 Egg White

4 Tablespoons of Water

Grated Rind of Two Lemons

Pinch of Salt

Directions:
Directions:
Put flour on a board. Make a well in the center.

add sieved egg yolks, butter, salt, egg yolks,

lemon rind and sugar. Work center ingredients

into a smooth paste, then quickly work in the flour.

Divide pastry in half. To one of the halves add

chocolate that has been melted with water,

then cooled roll out separately.

Brush light half with egg white & place dark

half on top. Roll out like a carpet. Place roll

in wax paper and chill in refrigerator.

Remove, cut into thin slices.

Bake 20 – 25 minutes in a 350º oven on a

greased cookie sheet.
