1 C. unsalted butter
1 C. sugar
1½ tsp vanilla
1 egg
2 tsp baking powder
½ tsp salt
3 C flour

Directions:
Directions:
Preheat oven to 350º. Cream butter and sugar until light and fluffy. Add vanilla and egg and mix until completely combined. Add baking soda and salt and mix until combined.
Slowly add flour a little at a time and mix until JUST combined. Do not overmix flour!
DO NOT CHILL! Divide dough into 2-3 batches and roll out on a floured surface. Roll to around ¼ thick. These are on the thicker side. Cut shapes and transfer to a parchment lined baking sheet. Bake 6-8 minutes. Cookies will be set but not browned. Remove from oven and transfer immediately to the countertop to cool.

I use this recipe for cookie painting as well. Roll and cut cookies then chill or freeze on parchment lined baking sheets (can stack with layers of parchment). Before baking, kids can paint these cookies with egg yolk and food coloring. Paint then bake as directed. Sprinkle with sugar when they come out of the oven. Cookie painting is one of my kids favorite holiday activities and I use it with my church kids as a service project! (We paint and bake then deliver to the fire station next door to our church or the police station just up the street!)

These cookies do not need icing! A sprinkle of sugar when they come out of the oven is nice but even that is not necessary. They can stand on their own!

To ensure there is zero spread (if you are wanting perfect shapes), freeze after cutting and put in the oven frozen. You will get perfect shapes every time!
