Grandma's Banana Bread Recipe

1¾ cup all-purpose flour
1½ cup sugar
1 tsp baking soda
½ tsp salt
2 eggs
1 C. mashed ripe bananas (about 2 ½ bananas)
½ C. vegetable oil
¼ C, + 1 Tablespoon buttermilk
1 tsp vanilla extract
1 C. chopped walnuts

Directions:
Directions:
1. In a large bowl, stir together flour, sugar, baking soda and salt.
2. In another mixing bowl combine eggs, bananas, oil buttermilk and vanilla.
3. Add to flour mixture, stirring just until combined.
4. Fold in nuts.
5. Pour into two 8X4 loaf pans sprayed lightly with cooking spray.
6. Bake at 325 degrees for 50-55 minutes or until bread tests done by putting a toothpick into the middle.
7. Remove from oven. Then turn pan over to release the loaves on a cooling rack.

I use disposable aluminum loaf pans and put them on a cookie sheet for even baking. The loaves freeze well, but the recipe does not double well.
