Ingredients: You can use a cut-up whole chicken or just the part you prefer. It works great with just thighs and legs. chicken parts dry ingredients white flour salt & pepper paprika - to taste all-around seasoning in the red container wet ingredients 2 eggs Milk Worcestershire sauce

Directions:Start preparing the chicken the day before. Wash and pat dry the pieces, then spread them out on a baking sheet. Heavily salt both sides. Don't worry it won't taste salty. It makes it tender and juicy. Cover with plastic wrap and refrigerate overnight. Pull it out an hour before you begin frying to warm. Preheat oven to 350º Mix the dry ingredients together in a bowl - set aside beat the eggs until well blended, add in the remaining wet ingredients, and mix. Use two shallow dishes or pie pans one for wet and one for dry. add enough in each so that it is about 1/2 to 3/4 in deep.
Add oil to a large, deep skillet until about 1/2 in. deep. Heat until a drop of water pops adjust heat if oil starts to smoke. One at a time, coat a piece of chicken 1st in the egg mixture then the flour. Gently place it into the hot oil being careful not to splash. continue with the remaining pieces until the skillet is full with no pieces touching. Fry it quickly. When a side is golden brown use tongs to turn it. When a piece is browned all around remove it with tongs and place it on a paper towel-covered platter or tray. Let excess oil drain off while frying the rest of the chicken. Add more oil as needed. Finish cooking in the oven. Place a metal cooling rack on a cookie sheet. Arrange pieces on the rack and put them in the oven. Bake until juice runs clear when stuck with a fork. Enjoy the best fried chicken ever! |

Notes: When I was in fifth grade I was brought to my step-father's family to live for a while. The first couple of weeks was with his grandma, who raised him. We slept in a feather bed she made herself when she was a new bride. She lived in New Mexico but was originally from the South. She made the best fried chicken! When I told her that, she taught me how to make it. Nothing was ever measured.
