2 cups
2 cups flour
1 tsp salt
2 tsp baking flour
2 tsp cinnamon
1 tsp vanilla
4 eggs
½ cup oil
3 grated carrots
1 cup nuts (I like walnuts)
1 small can crushed pineapple with juice

Icing:
3 oz cream cheese
1 stick butter
1/2 box powdered sugar
1 cup chopped nuts (I like walnuts)--to sprinkle on top

Directions:
Directions:
Mix all dry ingredients and set aside. In another bowl, mix the rest of the ingredients. Stir the dry ingredients into the wet ingredients and mix well. Grease and flour the pan.

Cook at 375º for 30 minutes.
