PINE NUT COOKIES Recipe

1 Lb. Almond Paste

4 Egg Whites

2 Cups of Sugar

6 ounces Pignoli (Pine) Nuts
Directions:
Directions:
Cut almond paste into small pieces, place in

a small bowl for mixing. Beat for one or two

minutes until soft and smooth. Use your hands

or a spoon if a mixer is not available.

Slowly add sugar, beat well. Add egg whites,

beat until smooth.


Place two cookie sheets one on top of the other,

to prevent browning cover with a sheet of

parchment paper. Drop mixture by teaspoon

onto baking sheet (paper) one inch apart.

Sprinkle each cookie with several pine nuts.

Bake for 20 minutes or until lightly browned.

When cookies are cool, remove from paper with

a sharp knife dipped in hot water. If cookies stick

wet a towel with hot water and place on a flat

surface. Place parchment paper with cookies

on it directly on the wet towel, let sit for one minute.

The moisture will loosen the cookies.

Bake in a 350º oven. Yield is 60 cookies
