Mom's Spice Cookies Recipe

Beat until fluffy:

1 cup Soft Shortening *
2 cups Brown Sugar
2 eggs

Stir in
1/2 cup cold coffee

Sift Together and Add
3 1/2 cups sifted flour
1 t baking soda
1 t salt
1 t nutmeg
1 t cinnamon

Drop on greased cookie sheet and bake at 350º for 8 - 10 minutes

Allow to cool completely before icing.

Coffee Icing *
1/2 stick butter at room temperature
2 cups powdered sugar
3 - 4 tablespoons strong brewed coffee hot

This recipe is a family favorite. I printed it exactly as my mom wrote it on her recipe card.

* However, I substitute 2 sticks unsalted butter at room temperature for the shortening.


* My mom did not give measurements for the icing ingredients . I'm hoping this icing recipe makes enough icing for these cookies. Otherwise you will need to make more.

These cookies are small....approx 2 inches in diameter. To make things easier, I use a disposable 16 cup pastry bag and wilton tip 24 to pipe these circles on my cookie sheet.
