2 c. vinegar
½ sugar
1 c. beet juice

dill

Directions:

Fill jars with boiled beets.

Boil vinegar, sugar, and beet juice.

Pour over beets. Add dill if you choose.

Seal/sterilize for 15-20 minutes.

Jean Hastings remembers a root/fruit cellar at the Dell farm, near the west side of the house. It had trap doors and was possibly also used as a storm cellar, as the farmhouse did not have a basement. Grandma Dell and the tenant Nettie Johnson would spend hours in the summer preparing canned goods, which were stored in the cellar. Although Elizabeth Dell lived in Cresco during the 1930's and 40's when Jean and Dode visited the farm, she would come out to the farm and stay during their visit. She also spent several weeks during the summer in Western Springs, where she and Ellen would can, mend linens, turn the collars on shirts, and re-cover pillows.
