Granny's Squash Rolls Recipe

Ingredients: spoonful of sugar ½ cup warm water 2 packages of yeast 1 cup milk, scalded ¾ cup squash (fresh or frozen) ¾ cup sugar 1 tablespoon salt ¼ cup butter 3 eggs 6-7 cups bread flour

Directions:Dissolve a spoonful of sugar in warm water, then add yeast and mix. (If yeast is good it should start to froth or form a head (as known by serious beer drinkers) on the water.) After milk has come up to temp remove heat and add butter and squash and stir well. Mix dry ingredients with water/yeast mixture then milk mixture (after it has cooled down). Next add eggs and mix, start to add flour (I add flour a tablespoon at a time to assure it is mixed well). After a dough ball is formed knead (pound and pull) it on a floured surface, roll into a ball and then place it into a greased bowl and then place in a warm place to rise, covered with warm damp cloth (set the oven temp to 110º and place covered bowl in the oven to rise). Wait until dough has doubled in size. Knead dough again. Cut and roll out dough balls, place three balls per cupcake pan. (Spray pan with Pam or rub with vegetable oil.) Let rise again and then bake. Bake 425º for 8-10 minutes. (I have found that when I use the convection oven I need to reduce temp to 350º.) |
