¼ c. coconut oil
1¼ c. sugar
1 t. salt
⅓ c. maple syrup
1 egg
2 t. vanilla extract
3 c. old-fashioned oats
1 c. all-purpose flour
½ t. baking powder
¼ t. ground cardamom
¼ t. ground nutmeg
¼ t. ground ginger
1½ c. dried cranberries

Preheat oven to 325°F, and line or grease two baking sheets.Cream together butter, coconut oil, and sugar. Mix in maple syrup, egg, and vanilla extract. In the bowl of a food processor, combine oats, flour, salt, baking powder, and spices. Process until oats are reduced in size (but not pulverized!). Stir in cranberries until they are coated. Add dry ingredients to wet and mix well. Using a #16 scoop (or a ¼ c. measuring cup), portion out 16 balls of dough. Flatten each into a hockey-puck shape about ½ inch thick. Arrange on the baking sheet with at least an inch between each cookie (they will spread some while they bake). Bake for 20 minutes or until golden brown. Allow to cool before moving or eating (they will crumble if moved while hot).
