½ cup margarine
2 tablespoons green pepper, finely chopped
2 tablespoons red bell pepper, finely chopped
1 medium size white onion, finely chopped
1 cup milk
1 can cream-style corn
1 can whole kernel corn, drained
2 eggs
4 tablespoons plain flour
Ritz Crackers
Salt and pepper to taste

Directions:
In a skillet, melt margarine. Add finely chopped onion, and green and red pepper; Saute with margarine until tender (not brown) under low heat. In a separate bowl, add flour, corn, milk, and 2 eggs (slightly beaten) and mix well. To this mixture, add melted margarine with onions and peppers. Salt and pepper. Oil a square 8 x 8 casserole dish with cooking oil, and spread cracker crumbs on the bottom and side of dish-cooking oil to help cracker crumbs stick. Reserve some cracker crumbs for the top of the casserole. Pour the mixture into the casserole dish and cover the top of the casserole with the remaining cracker crumbs. Bake at 350º F for 60 - 75 minutes - over whatever is best for your oven.
