Crust:
1 ½ cups graham cracker crumbs
⅓ cup butter

Cake:
Large can fruit cocktail (reserve syrup and ½ cup fruit)
1 3 oz. pkg. lemon jell-o
½ tsp. salt
2 cups cottage cheese
1 cup whipped cream

Crust:
Combine graham cracker crumbs and butter.
Spread in 8" square pan and chill.

Cake:
Drain large can fruit cocktail (reesrve syrup and ½ cup fruit).
Heat 1 cup syrup and dissolve lemon jell-o and ½ tsp. salt in it.
Cool until slightly thick.
Blend 2 cups cottage cheese in blender until smooth.
Whip 1 cup whipped cream.
Fold remaining drained fruit, cottage cheese, whipped cream, and 1 tsp. vanilla into jell-o.
Pour mixture into crumb-lined pan. Chill.
Decorate with reserved fruit.

**I chop up fresh peaches or nectarines to add to the mix in addition to the canned fruit. Really made it delicious.
