1 ¼ cup flour
1 cup sugar
1 ½ teaspoons baking powder
1/2 teaspoon salt
¾ cup milk
1/3 cup shortening
1 egg
1 teaspoon vanilla

Directions:
Directions:
Preheat oven to 350º F. Grease and flour square pan, 8x8x2 or 9x9x2 inches. Measure all ingredients into large mixing bowl and blend ½ minute on low speed then 3 minutes on high speed scraping the sides. Pour into cake pan. Bake 35-40 minutes or until toothpick pricking center comes out clean. Cool and frost or top with Lemon Sauce and grated nutmeg. (see below
 

Old Fashioned Lemon Sauce

1 cup sugar
½ cup butter (or margarine)
¼ cup water
1 egg, well beaten
¾ teaspoon grated lemon zest
3 tablespoons lemon juice

Combine all ingredients in medium saucepan. Heat to boiling (temper the egg) over medium heat, stirring constantly. Serve warm and sprinkle with grated nutmeg.
