3 T shortening (I use coconut oil)
3/4 c brown sugar
3 eggs, separated
3 cups flour
Milk
4 tsp baking powder
2 tsp vanilla

Directions:
Directions:
Separate eggs and add yolks to shortening. Mix in brown sugar. In a separate bowl beat egg whites until stiff and set whites aside. Add flour and baking powder alternately with milk to the sugar mixture until you have a medium batter. Fold in egg whites. Spoon batter onto hot griddle.
