Lemon-Ricotta Cookies Recipe

3 1/2 c flour
2 tsp baking soda
1 c unsalted butter soften
1 c sugar
1 pkg lemon flavor instant pudding
1 tbsp. lemon zest
15 ounces ricotta cheese
2 eggs

Icing:
3 c powder sugar
5 tbsp. lemon juice (use about 2 lemons for this)

Directions:

Preheat oven to 350º.

Combine dry ingredients of flour and baking soda in a bowl.
In a separate mixing bowl combine, butter, sugar, dry pudding mix, and lemon zest.
Blend well.
Now add ricotta and eggs; mix well again.
Gradually add dry mixture mixing well before adding more.
Use a small ice cream scoop and roll into 1 inch or so balls and place on a parchment lined cookie sheet.
Bake for 12-14 minutes until edges are lightly browned.
Let cool.

Make icing by mixing powder sugar and lemon juice.
Dip cooled cookies halfway into icing add sprinkles if desired and let set.
