1 cup brown sugar
1 cup sugar
1 cup shortening, room temperature
2 eggs
2 cups flour
1/2 tsp. salt
1 tsp. baking soda
1½ tsp. baking powder
2 cups oats
1/3 c. water
1 tsp. vanilla
1 cup coconut flakes
1 cup pecans, chopped

Directions:

Preheat oven to 375º.

Mix sugars and shortening with hand or stand mixer until light and fluffy. Add eggs on low speed until combined.

Mix flour, salt and baking soda in medium bowl. Add to bowl and mix until combined. Stir in remaining ingredients and mix well.

Drop onto ungreased cookie sheets by spoonful. Bake about 10 minutes.
