6 large artichokes
1 tbs. parsley
Juice of 1 lemon
1-2 cloves garlic
1 cup bread crumbs
salt and pepper to taste
½ cup Romano cheese
1 cup olive oil

Stuffed Artichokes

1 cup bread crumbs salt and pepper to taste
½ cup Romano cheese 1 cup olive oil

Hold artichoke by stem and hit the top of the artichoke on a cutting board to open the leaves. Cut about ½ inch off the top and snip the tip off each leaf so that there are no sharp edges. Wash artichokes and let soak a few minutes in a pot of water with lemon juice squeezed into to with the top down. If there is any sand in the artichoke it will fall to the bottom of the pot.
Mix bread crumbs, cheese, parsley, garlic, salt and pepper and stuff artichokes. Put artichokes in a large pot, add 1-2 cups of water and drizzle olive oil over the tops of the artichokes. Cover and let simmer for 45 minutes – 1 hour. Artichokes are done when you can easily pull a leaf out.
