2 pounds sweet potatoes
1 T fresh thyme
1 T fresh dill, chopped
1 tsp salt
1/2 tsp paprika (plus 1/4 tsp for garnish)
juice from 1/2 lemon
1 cup mayonnaise
1/4 cup green onions, white part thinly sliced (plus 2 T green for garnish)
1/2 medium red onion, diced
4 T bacon, cooked till crispy

Directions:

Peel sweet potatoes and cut into cubes. Place in large pot and cover with water. Bring to boil, and boil 5-10 minutes just until fork tender. Drain and let cool completely. While potatoes are cooking/cooling add remaining ingredients together and place in refrigerator until potatoes are cool. Gently stir together, being careful to not over-mix and break up potatoes.
Let the sweet potato salad chill, covered, in the refrigerator for at least 1 hour, or overnight. Once chilled, gently stir once more and garnish with the additional green onion, bacon and paprika.
