1¼ cup all-purpose flour
1 TBS espresso powder
½ tsp salt
½ tsp baking soda

1 (3-ounce) pkg cream cheese
½ cup sugar
½ cup shortening, butter-flavored, softened
½ cup cup light brown sugar, firmly packed

1 egg, large
1 tsp coffee extract
1 tsp vanilla extract

¾ cup chocolate chips/chunks, milk
¾ cup chocolate chips/chunks, bitter
½ cup nibs OR pecans (Vera recommends pecans)

2 bowls, medium
2 baking sheets, lined with parchment paper
electric mixer
spatula, rubber
2¼" ice cream scoop
2 wire racks
container, airtight

Directions:
Directions:
Preheat oven to 350º.

In bowl, combine first 4 ingredients.

In separate bowl, beat next 4 ingredients on medium-high speed for 5 minutes or until creamy.

Add egg & extracts and beat well.

Reduce mixer speed to lowest setting. Pour about ⅓ of the flour into the batter; then another third; then the last third.

With a spatula, fold in last three ingredients.

Use the ice cream scoop to place cookie dough at least 2" apart from each other onto the sheets.

Bake 12-15 minutes, or until edges turn light golden brown.

Cool the cookies--leaving them on the baking sheets--for 5 minutes.

Place on the wire racks and let them dry completely.

Ice with coffee icing (also in this cookbook) if desired.

Store in an airtight container. Cookies will keep up to 5 days--if you can keep them from being eaten before then! :)

It’s also worth noting that drinking, say, 9 cans of Cokes is not the same as drinking 1 can of Bang. Of course, the amount of sugar in each can of Coke, added together, would be astronomical. However, an easily-missed difference is that drinking 300 MG of caffeine immediately is not the same as drinking it over, say, a course of 8 hours.

The more caffeine you consume in a short period of time, the greater the risk you will experience dangerous symptoms, including fast heart beat or a severe panic attack. High amounts of sugar combined with high amounts of caffeine can cause blood sugar spikes & crashes as well, complicating the symptoms you can experience.

It’s best to start out with a small amount of caffeine until you learn how it affects you, especially if you are trying a new form of caffeine, such as a new energy drink. Very little is said about the effects of caffeine in our culture, but it is a drug, which is worth remembering! Use caution before trusting your heart to energy drinks!
