1/2 cup sugar

1/2 cup packed brown sugar

3 tbsp. all purpose flour

1 tsp. ground cinnamon

1/4 tsp. ground ginger

1/4 tsp. ground nutmeg

7 to 8 cups thinly sliced peeled apples

1 tbsp. lemon juice

Pastry for 9" double crust pie shell or buy a frozen pie shell and pastry dough.

1 tbsp. butter

1 egg white

additional sugar

In a small bowl, combine sugars, flour and spices; set aside. In a large bowl, toss apples with lemon juice. Add sugar mixture; toss well to coat. Line a 9" pie pan with half the pastry or use a frozen pie shell.

Place apple filling into crust; dot with butter. Top with remaining pastry; flute edges and cut slits in top. Beat the egg white until foamy; brush over pastry.

Sprinkle sugar on top. Bake at 375º for 35 minutes. Increase temperature to 400º and bake 10-15 minutes more or until golden.
