Cheesy Pasta with Tomatoes Recipe

Ingredients: Cherry tomatoes, sufficient to cover the bottom of a 13 x 9" baking dish Olive oil Basil flakes, Italian seasoning, garlic powder, salt, pepper, to taste Feta cheese block, 7-12 oz Optional: additional crumbled feta or other cheese (e.g., mozzarella)
Pasta--shells, corkscrews, or other short-noodle pasta
Grilled chicken, or shrimp, or whatever else you might like to go with the pasta, if you want to make it a main course
Fresh Basil, if available

Directions:Preheat oven to 400º.
In a bowl, stir together olive oil, seasoning, and (uncut) cherry tomatoes.
Optional: spray canola oil in the bottom of the 9 x 13 baking dish
Put the block of feta cheese in the middle of the baking dish. If needed, cut the block so it is ~1/2 inch thick (or a little thicker is also ok). Surround the feta with the seasoned cherry tomatoes. Bake for 30 min.
While the tomatoes/feta are baking, cook the pasta according to directions.
Grill the chicken/seafood so that it is done about the same time the tomatoes are done.
After the allotted baking time, take out the feta/tomatoes, pour on the cooked pasta, and stir together to mix. Add additional crumbled feta (or a different kind of cheese such as mozzarella) to taste.
Rip up some fresh basil over the top.
Serve with grilled chicken / shrimp or as is. Enjoy! |
