2 1/4 cups flour
2 tsp ground ginger
1 tsp baking soda
1 tsp cinnamon
½ tsp ground cloves
¼ tsp salt
¾ cup unsalted butter, softened
½ cup granulated(white) sugar
½ cup packed brown sugar
1 egg
1 tbsp water
¼ cup molasses (spray cup with vegetable spray-helps to not stick)
2 to 3 tbsp sugar, for rolling

1 - Preheat oven to 350°F. In a medium bowl mix together the flour, ginger, baking soda, cinnamon, cloves and the salt; set aside.
2 - In a large bowl, using an electric mixer cream together the butter and both sugars until light and fluffy. Add the egg, water and molasses, mix just until combined. Gradually mix in the dry ingredients scraping the sides of the bowl as needed.
3 - Shape into rounded tablespoon size balls, roll in sugar place 2” apart on cookie sheet. Bake 8-10 min. Allow to cool for 5-7 min. on the cookie sheet before transferring to a wire rack to cool. YIELDS 36 cookies.
