1 3/4 c flour
1/2 tsp baking soda
1/2 tsp salt
1/2 c cocoa (powdered)
1/2 c shortening
1 c sugar
1 egg
1/2 c milk
1 tsp vanilla extract
1/2 c chopped walnuts (optional)
2 doz large marshmallows, cut in half

COCOA GLAZE
1/2 c cocoa (powdered)
1 1/2 c powdered sugar
3 tbsp hot water
1/3 c butter, melted

Directions:
In large bowl, mix together dry ingredients: flour, soda, salt and cocoa; set aside. In another large mixing bowl, cream shortening with sugar until fluffy. Beat in the egg. Add flour mixture alternately with milk; beating well. Add vanilla and nuts (if desired). Mix well. Drop by teaspoon full onto a greased cookie sheet. Bake at 375º for 8 minutes. Remove from oven and top each cookie with 1/2 of a large marshmallow, pressing gently into cookie. Return to oven and bake 4 more minutes (marshmallow will melt and be light golden brown). Cool cookies and then top with chocolate glaze. GLAZE:
Mix together cocoa, sugar, water and melted butter until smooth. Spread frosting evenly over cookie. Let icing dry before serving or storing in an airtight container.

We loved it when mom made these double chocolate delights. The gooey marshmallow under the icing was an extra treat.
