3/4 c butter, softened
1/4 c coconut oil
1/4 c brown sugar
2 tsp vanilla
1 1/2 c flour
1 tsp salt
1 1/4 tsp cinnamon
3/4 c icing sugar
1/4 c cornstarch
2/3 c rolled oats
2/3 c shredded coconut
1/2 c raisins
Melted white chocolate, for drizzling (about 1/3 c)

Preheat oven to 350ºF. Grease a 7"x11" baking pan.
Cream butter and oil with brown sugar.
Blend in vanilla.
Sift together flour, salt, cinnamon, icing sugar, and cornstarch.
Add about a third at a time to creamed butter mixture.
Stir in oats, coconut, and raisins.
Press into greased pan and bake until just beginning to brown around edges and center is no longer shiny, about 24 minutes.
When mostly cooled, cut into triangles.
Drizzle with melted white chocolate.

I affectionately refer to these as "I'm almost 30" shortbread since the flavor combo makes me sound so old. But I do love the texture and flavors anyway, so I'm just going to lean into this new season!
