1 cup of shortening/butter
3/4 cup white sugar
3/4 cup brown sugar
2 large eggs
1.5 cups sifted whole wheat pastry flower
1 tsp. baking soda
1 tsp. salt
2.5 cups of chocolate chips
2 cups of quick cooking oatmeal (not 1 minute version)
1 tsp. vanilla extract.

Preheat oven to 375º F. and place wax or parchment paper on a baking sheet.

In a large bowl, add the shortening/butter and the mixed sugars. mix then add the eggs. Set aside.

In another large bowl, mix together flour, baking soda and salt. Combine the 2 mixtures of together and add the remaining ingredients mixing the ingredients thoroughly.

Scoop cookies onto the baking sheet, shape into balls about 2 inch in diameter, allow 1 inch of space between cookies.

Bake in oven for about 8-10 mins.

Allow to cool on a wire rack before eating.
