Ingredients: 3 large cucumbers, peeled and sliced thin 1 medium white or yellow onion, halved and thinly sliced (You may use red onion, too) 2 cup white vinegar 4 cups cold water 1/2 cup or more granulated sugar 1 1/2 teaspoon Kosher salt 1/2 teaspoon freshly ground black pepper Optional: 1/8 cup fresh parsley, finely chopped

Directions:In a large mixing bowl, add cucumber and onion. Add vinegar, water, sugar, salt and pepper. Toss and stir until well combined. Taste for desired tanginess/sweetness. Add sugar a little at a time until perfect. If using, sprinkle with parsley and stir again.
Pour into airtight container and chill in refrigerator for a couple of hours for the flavors to blend and salad is well chilled. Serve with slotted spoon.
Chill leftovers for up to four days in refrigerator. |

Notes: A favorite of dad's as long as I can remember. Grandma would have this ready for him when he would come to visit. She would also have this available for Christmas Dinner as a treat for her whole family. Mom learned how to make this, so I guess I learned how to make it from her. Now a favorite of ours. It is great for family get togethers or at the Holidays.
A wonderful tangy and sweet side dish to accompany any meal.
Harry adds 1 tablespoon of sesame seeds to the bowl and stirs.
