2 sticks melted unsalted butter
2½ c. old-fashioned oats
1¾ c. sugar
1 c. dried apples (I found at Walmart)
¼ c. all-purpose flour (spooned and leveled)
¾ tsp. ground cinnamon
½ tsp. fine salt
2 large eggs, lightly beaten

Preheat oven to 350º. In a large bowl combine butter, oats, sugar, apples, flour, cinnamon, and salt. Stir in eggs. Drop dough by rounded tablespoon 3 inches apart onto parchment-lined baking sheets and gently flatten with damp fingers. Bake one sheet at a time until edges are golden, 10-12 minutes, rotating sheet halfway through. Let cool completely on parchment sheets on wire racks. Store in air-tight containers up to one week.
